Caramelized Pressure Cooker Carrot and Parsnip Soup

A very happy new year to all our readers! We start 2014 with a great recipe from Zack, an avid foodie who shares his recipes and kitchen experiments on the food blog Mama Tommy's. He is also a very good friend of GitaDini and a so-called "Early Adopter" - meaning he's tested all the GitaDini kitchen gear and gives us feedback on how to improve our designs. Soups are perfect for this time of the year, both for warming up and also for shedding a few pounds you might have added over the holidays. This recipe contains quite a bit of butter so you might have to adjust it for a leaner version.
