She was kind enough to let us share her tasty recipe on our blog.
What you need:
1 1/2 cup wheat
1 russet potato (boiled and peeled)
1/2 tsp red chili powder
tsp coriander powder
1/2 lime - juice from 1/2 a lime
Salt per taste - a
little is more than enough for this
Flour for dusting
I put them all together (except the flour for dusting!) in my
faithful old food processor and had the dough ready in a couple of minutes. If
needed, you can add a couple of spoons of water - but I did not need
Divide the dough into about 8 to 10 smooth rolls.
Now use your rolling
pin to flatten to a circle
Place on heated tawa and flip it over to cook both
sides - each side until golden-brown spots appear. You can also add a pat of
ghee around the edges to enhance the flavor.
Serve with zucchini raita.
What you need:
1/2 tsp mustard seeds
1/2 tsp urad dal
dry red chili (or to taste)
salt to taste
1 tsp oil
1 1/2 cup plain
How to make:
Shred the zucchini and keep aside (I
used my new 3-blade vegetable peeler for this and it worked out great)
the oil. Add the mustard seeds, once it sputters, add the red chili and the urad
When the dal turns golden brown, add the shredded zucchini and saute for
a couple of minutes. Let it cool.
Beat the yogurt well, add salt to taste
and add the prepared zucchini. Ready to serve with your parathas now.

It looks great on my kitchen
counter - adds a splash of color. The board itself is sturdy and provides me
additional height over the counter-top. This made me realize that I was bending
over a bit earlier - pre-Rotito - to roll out rotis - and would sometimes end up
with sore shoulders, achy back, and more. Now, the additional height provides
loads of relief - thus the need I did not know I had! The steel container for
flour is a great addition - I do not now need to go hunting for a plate or bowl
to put flour in for dusting each time - it is already there!
does not stick to the board, even if - as my little one did in her excitement -
one manages to roll it too hard and too much. That is definitely a plus point.
It is easy to clean as well. One other use for the flour container I found - for
misshapen rotis (both by me and my little one) - I used the lid
to get a perfect circle! You can see that in the collage up there.
GitaDini offered me three different rolling pins to try out and compare with the Rotito set and I liked them all for different reasons but my favorite one has to be the widest rolling pin. The two thinner ones are tapered pins and seem to help in rolling it thinner and more evenly while the widest one which is not tapered but has handles helps to flatten the dough efficiently as I begin making the chapattis. I am noticing that I use the widest one lot more. My little girl loved the middle one – she felt it was just right – like Goldilocks :).
The Rotito is now a gadget that will be used often by me and my little girl too!"
